  Fore Distillery

Established in 2021 by Meath native Oliver Guirke, Fore Craft Distillery sits in the shadow of the Abbey, inspired by both American distilling techniques and ancient Irish traditions. Oliver blends Kentucky know-how with local recipes, producing small-batch Golden and White Irish Rum and Poitín. Using Boyne Valley grain and Fore spring water, the spirits are carefully distilled and matured in bourbon and Irish oak casks.  While in the U.S., Oliver met his wife Sheena from Armagh, who now runs the distillery’s Barrel & Bean Café overlooking scenic Lough Glore. Together with their three children — the Guirkes have created a warm, family-run destination blending craft, culture, and community.
